The Cerrado Mineiro Region is globally recognised for producing high quality coffee- the first “Designation of Origin” in Brazil. The team at São Luiz, led by Ana Cecilia Velloso, produce 13,000 bags per year on their 350 hectares of land - and have won multiple awards for the quality of the beans produced.
This particular coffee is a pulped natural - prepared by removing the skin from the ripe cherries after harvest. The green beans are then left to dry in the sun with the sweet, sticky flesh (mucilage) surrounding the bean still intact - after which the beans are cleaned in a dry mill to complete the process. The result is a sweet, acidic, balanced coffee with notes of dark chocolate.
NOTE: These are whole beans: stick 'em in your food processor, blender or even use a pestle and mortar to grind if you're feeling bold and don't have a coffee grinder to hand.
